Luis grew up in Veracruz, Mexico. He has Been working in the Food industry since he was just 16 years old where his passion for food developed. We wanted something unique, made fresh, the old fashion way and that everyone would enjoy and remember.
Serving Since 2019
In 2019, we had the opportunity to buy a food truck, we originally had the idea of traveling from town to town but God had different plans for us. One day we shared the idea with the sweet owners of Hardcastle Storage which Luis had known for many years and they happily offered to park it outside of their property in Lavon and we stayed there for a few years.
In July 2023, we had a big update – we sold the food truck and bought a brick and mortar restaurant just a few miles down the road. More of our story coming soon!
Who We Are
We are Iliana and Luis, husband and wife team, owners of Los Marquez.
Luis grew up in Veracruz, Mexico. He has Been working in the Food industry since he was just 16 years old when his passion for food developed, at just 18 years old one day he took the role as a head cook trainer at the Restaurant he was working, This title took a LOT of work and sweat. Cooking went from never before on his radar to his number one goal overnight, shortly after and at such young age. He was traveling state to state opening new restaurants for the company he was working for. In 2001 he landed in Bossier City Louisiana where we met.
I grew up in San Luis Central Mexico, my passion for food comes from my mother, she taught me all her favorite recipes, I remember she would spend all day literally in the kitchen back in Mexico. My father had a small convenience store and my mom would bake all of the sweet bread to supply my dad’s little shop. As I grew I started realizing my love for food so I decided to get deep into it.
My mother says we are born with a talent and I truly believe that. Even though I learned A LOT from my mom, many recipes I discovered on my own.
Luis and I are the happiest people feeding crowds and creating food memories with loved ones. We relate everything in our lives to food.
We always knew we wanted to share our recipes for many to enjoy and open a small place one day. We wanted something unique, made fresh, the old-fashioned way and that everyone would enjoy and remember.
We THANK YOU for your continued support, for constantly filling our tickets on the board, for talking about us to your neighbors and family. Many of you ask for more menu items and believe that one day as we grow we want to be able to offer you all of our favorite recipes.

I want every atheist to try this restaurant. After eating here, you’ll be a believer. We get the Quesabirria Tacos 🌮 which absolutely slap. On a scale of 1-5 they gets five slaps. If you are feeding a group of four or more you should buy the family pack as it is cheaper.
